Recipe | Chocolate Orange Cupcakes...

Every now and again, when I want a treat, cake is the only thing that will cut it! On Wednesday I was in a productive mood, I cleaned right through the house, went to visit family, cooked a nice meal and the cupcake 'need' appeared, so whilst I had the energy, I decided to bake some cupcakes. I posted a picture on Instagram as soon as they were ready and I got some great feedback on them so I thought, why not share the recipe?! Let's face it, when you see something that someone's made and you fancy it too, you usually want to know the recipe, or maybe that's just me... This was actually a recipe I found on GoodFood posted by one of their lovely members and boy, did she do good with this recipe!


Cupcakes -
40g Cocoa Powder
175g SR Flour (I opted for Gluten free)
175g Butter
175g Caster Sugar
2 Eggs (lightly beaten)

Icing -
50g Melted Butter
45g Cocoa Powder
75ml Milk (I opted for Almond Milk)
1Tsp Vanilla Extract
450g Icing Sugar (this seems a lot initially but add gradually and it does work)

Decoration -
2 Large Terry's Chocolate Orange Balls or 5 Bars and 1 crushed bar 
( I used 3 bars, 1 piece on top of each cupcake instead of 2 and I left out the crushed bar)


Cupcakes -

1. Preheat Oven to 180c and line a muffin tin with 12 cases - make sure you use cupcake cases and not regular cake cases as cupcake cases are larger
2. Beat the butter and sugar together in a large bowl until light and fluffy
3. Gradually add the eggs
4. Sift both the flour and the cocoa powder in and mix together
5. Divide the mix between the cupcake cases
6. Cook for 15-20 minutes and then leave to cool for 5 minutes, leaving them in the tray

Icing -

1. Mix all ingredients together in a large bowl
2. Spread evenly on top of each cupcake

Decoration - 

Put 2 slices of Chocolate Orange on each cake and sprinkle with the crushed orange bar.

These cupcakes are seriously good and I love how simple they are to do, I'm not the best at baking so something simple is usually the best way forward for me. Next time I think I will add a little orange essence or zest into the icing to add to the chocolate orange flavouring and I'd like to make double the amount so that I can share them with my family and friends, yes, those 12 didn't go much further than our house, Guilty!
